Crostini with Brie and Orange-Cranberry Relish

For best results, make the orange-cranberry relish a day or two in advance to give the flavors a chance to mingle. When you are ready to serve, allow the prepared relish to reach room temperature or heat it briefly in the microwave (for about 20 seconds) to warm it up a bit. This will melt the Brie even more and make for a delicious, warm appetizer.

Crostini Cranberry Relish

TIP: The orange-cranberry relish stores well and can be served on its own as a tasty side dish – so don’t be worried about any left overs from making these yummy appetizers!

Yield: approximately 30 crostini

Ingredients:

Cranberry relish:

12 oz. bag fresh cranberries
1/2 c. white sugar
2 T. real maple syrup
3/4 c. orange juice
2 t. fresh ginger, grated
2 t. ground cinnamon
2 T. orange zest

Crostini:

1 long, thin baguette, cut into 1/3” slices
3 T. unsalted butter, melted
8 oz. Brie cheese, rind removed and cut into thin slices

Directions:

Preheat oven to 350 degrees.

Combine cranberries, sugar, maple syrup, orange juice, ginger, cinnamon and orange zest in a saucepan. Cook over medium-high heat, stirring constantly, for 10-12 minutes or until the cranberries “pop.” Remove from heat and cool completely. Use immediately or transfer to an airtight container and refrigerate.

Arrange bread slices on a large, rimmed baking sheet and brush tops with melted butter. Bake until bread turns golden brown, approximately 7 – 9 minutes. Remove from oven and place one slice of Brie on each slice while it is still warm. Top with cranberry relish and serve immediately.
